Easy and Quick Homemade Meatloaf Recipe



Homemade Meatloaf




Ingredients:

2 lbs ground beef

2 eggs - well beaten

1 medium onion - finely chopped

2 cloves garlic - minced

1 cup bread crumbs

1 cup milk

2 tbsp brown sugar

ground black pepper and salt to taste




Preparation:


1. Preheat oven to 350 degree fahrenheit 

2. In a large bowl, combine the ground beef, beaten egg, chopped onion, milk, bread crumbs, pepper and salt and mix well.

3. Lightly grease 9x13 inches pan and form the mixture into a loaf.

4. In a small bowl, combine brown sugar and ketchup. Mix well and pour on top of meatloaf.

5. Bake for 1 hour.






This is my homemade meatloaf served with mashed potatoes and fried okra or lady's fingers. For the recipe of my mashed potatoes and fried okra, I may post next time. Hope you're enjoying my simplest, quickest and tasty food. Thank you for following my blog.

Easy and Quick Spiral Macaroni and Chicken Soup



Spiral Macaroni and Chicken Soup





Ingredients:


2 cups of spiral macaroni pasta 

3 chicken breast - cooked and shredded

1/2 cup of carrots - thinly sliced
 
1/2 tsp ginger - finely sliced

1 medium onion - minced

3 cloves garlic - minced

1 chicken cube

2 tbsp of scallion - finely chopped

1 tsp soy sauce

ground black pepper and salt to taste

4 cups tap water



Preparation:


1. In a deep pan boiled the chicken until cooked, drain the water, cool it down until ready to be shredded.

2. Cook the spiral macaroni pasta in a deep pan until tender. Drain it and put aside.

3. Heat a deep pan with 1 tbsp of cooking oil. Saute onion, garlic, ginger and chicken cube.

4. Add shredded chicken, mix well and add soy sauce, salt and ground black pepper.

5. Pour 4 cups of tap water and bring to boil.

6. Add carrots and cooked spiral macaroni pasta. Simmer for 2 - 3 minutes.

7. Garnish with finely chopped scallion. Serve while hot.

Easy and Quick Dessert Recipes



Banana Split Pie




Ingredients:

1 graham cracker pie crust

3 oz Philadelphia cream cheese

2 cups powdered sugar

2 medium bananas

8 oz crushed pineapple

6 oz instant white chocolate pudding

6 oz pie filling mix

Strawberries

Reddi Wip Dairy Whipped Topping





Preparation:

1. Beat cream cheese, powdered sugar together until fluffy.

2. Spread evenly over bottom of crust.

3. Drain pineapple well and spread evenly over cream cheese.

4. Slice banana and cover the pineapple with slices.

5. Mix instant white chocolate pudding and pie filling mix and spread evenly on top of banana slices.

6. Garnish with slice of strawberries.

7. Then, refrigerate for 30 mins to 1 hour before serving.

8. Serve with Reddi Wip Dairy Whipped Topping





Quick and Easy Tender Pot - Roasted Beef



Tender Pot - Roasted Beef





Ingredients:


2 lbs Tender Chuck roast beef

1 large onion, sliced quarterly

2 medium carrots - peeled and cut into half

4 medium potatoes - peeled and cut into half

5 stalks celery - sliced ( 2 ins long)

2 cloves garlic - crushed

2 cups cream of celery soup



Preparation:


1. Preheat oven to 350 degree fahrenheit. 

2. Pierce the beef with a knife. 

3. Cover the 9 by 13 pan with aluminum foil and place the beef in the center of the pan.

4. Add all prepared vegetables: garlic, onion, carrots, potatoes and celery.

5. Pour cream of celery soup on top of beef and vegetables.

6. Seal the pan with aluminum foil.

7. Bake for 3 hours or until very tender.

Vegetables




Summer is fun! Summer is time for gardening for some people who like to do it. Like my father-in law, he planted a lot of vegetables this year just in their backyard. They spent time in cultivating the soil, planting different kinds of vegetables and enjoying, fixing dishes with fresh vegetables from his garden. When time of harvesting, he shares to us , to his friends and neighbors. I'm happy to name all kinds of vegetables he had planted this year. They are; tomatoes, yellow squash, onions, cucumber and the rest are shown below; okra, all kinds of peppers and Chinese pumpkin. In this season, we can save a little bit on our groceries even just for the vegetables only. So, it really helps.




Okra is also known as Lady's Fingers in English-speaking countries. Okra is rich in Fiber, Vitamin C and Folate also known for being high in antioxidants. It is also a good source of Potassium and Calcium.

Beautiful Flowers


One beautiful Saturday morning, I was strolling in the neighborhood with my 10 months baby boy. I've had my camera with me planning to take some pictures of flowers in the neighborhood. It was kind of a rush because every time I stop and take picture, my son  fussed, he doesn't want to stop and stay longer  which he has no idea of what I'm doing but I able to get some photos.
